If you have a customer who consistently supports your business you might consider offering them a discount out of appreciation. Especially when you know a loyal customer might make significant purchases in the future it can be valueble to give them a reward.
It depends on the situation. If he/she left in good terms it maybe worth rehiring them. But if not there is a chance they'll do it again.And they may feel even more comfortable leaving the second time since you'll rehire them if things don't work out.
