Which one do you think? Should someone doing food business cook and sell just one kind of food say rice? Or the person should sell different kinds of food and varieties.

Depends what your clients ask. We have two fast food shops in main center and most things they sell are sandwiches, kebab and hamburgers. This is 90% of traffic. They have some other options but those goes on 10%. Of the owners say he don't need anything else since nobody will buy.
If you run restaurant where grown and adult people come than better offer attract more people. If your customers are kids from high school and drunk people from bars, than you don't need soup for them.
I am not the soup thing. In my country, most people who got drunk prefer to have some soup in their system. According to them, it is the best way to remove the feeling of drunkenness. I think it is a culture thing.
Most restaurants here offer a variety of foods for customers to choose. Even Japanese Sushi shops offer different types of sushi. I'm only aware of a company who just offers fried chicken. Probably because of their special recipe, their chicken is very popular.

I think it has to do with the market and how they respond. If they demand majorly for a particular kind of food, you have to focus on only that one that moves.
It is often better to focus on different varieties of food that are nutritional.
If you are into selling of food business, it is not ideal to sell one kind of food commodity. Customers have tastes in variety of foods. What a customer want would different from another customer demand. If you go to typical canteen shops, you will notice various kinds of foodstuffs are sold based on their customers demand and tastes.
Cooking varieties of meal is a very good way to make money very quickly for yourself.
If you have the resources to do more than one then there is no problem, the most important thing is that it is in demand. There are also most restaurants that started with one food then overtime they started adding other dishes.
I prefer food businesses that sell various kinds of food that are still the same. Because human nature easily gets bored if they only consume one variety of food continuously, they need other variations of food to fulfill their desires.
I think a business should specialize in a niche or two. Same with food business, you should focus on a particular kind of foods or two. But don't stretch more than 3. Become a reference point in those and watch your business gain huge patronage.
