How does the opening and closing hours of the business affects it's performance?

That depends on the products you sell. Some fast food chain like McDonalds opens 24x7. Same for convenience stores. Bakery selling breads also open early.
It varies from one companies to another. Some can work at least 8 hours during the work days. There are times that it is more than that. However, they still need to consider night differential pay, overtime pay, and the like.
Opening and closing hours of a business plays very important role. I myself passed through this experience as when I started to open my business at 10:00 a.m. and close it at 7:00 p.m. Then it was not running well then I change its timing from 8:30 a.m. to 9:30 p.m. then overall business started growing.
I believe that every business owner who really want to show good dedication to his business will always open his business on time to make sure that he is available to attend to his customers when they come.
Yes, I totally agree with you, working hours need to be clear and not easily changeable, so as not to confuse loyal customers and potential new customers. Except online businesses can be ordered anytime for 24 hours, while service depends on the shop owner's working hours.
Most of the establishments that I see, they open and close their business, when there are already more or low traffic in their areas, for examples, like in malls, they open late in the morning when they knew that most of the people who go there, are near their noon break, and they will close when they knew that traffic is already diminished.
If the business opens early, it would have much more time to carry out it's operations and it would achieve more in the course of the day. If it opens late, it might probably achieve less.
