If it does happen, I would tell him or her to stop doing it. I cannot let the situation escalate into a worse situation. Besides, I do not want him or her to be in danger for doing so. There are some countries that cannot accept this kind of scenario. We can just inform him or her to be sensitive and accept the differences politely.

I will tell him that what he did was something that would be rude or inappropriate in my country, if he apologizes then that is to be expected. If not then I will lose respect for him, and probably will not continue to work together.
You don't have to despise them or publicly condemn or rebuke them. You subtly call them asides and correct him or her. It is one of the requirements of customers management.
I would let him/her know in private and in a polite manner that his/her behavior is not appropriate in my location. This is to ensure that s(he) will not be in an embarrassing or even dangerous situation.
What he or she did is not right. It is not proper to make bad gestures as it is rude. I will talk to him or her nicely and tell him or her not to make the same bad gesture again as it can put him or her in danger.

I will also do the same thing. I will try my best to polite when talking with him or her to prevent possible conflicts between us.
