I understand that food business is complex and dishihg it for profitability is a special skill on it's own but I still believe one should not be cheated in the process. You can go learn and master the skill of dishing food.

You have stated it rightly. Some of us have been socialized into accepting cheating as a normal way of doing things.
I once heard a person involved in selling fresh milk declaring that it is okay to add some commonly used unorthodox 'preservatives' into this product. This person is a classic case of someone who has internalized cheating.
Betrayal is what kills most businesses. It takes longer years to build trust in businesses but does take shorter period to kill that businesses through betrayals. Abd once betrayed, customers hardly trust again. So care must be taken on how we should be dealing with our customers.
This is the reason why I buy whatever then I need to buy in terms of snacks and bread directly from the factory where it is been made so that I will not be lied to and made to buy an old stock.
A key reason why businesses betray the trust of stakeholders by engaging in cheating is greed. Owing to greed, a meat seller may choose to add unsuitable chemicals to meat so as to avoid incurring the expenses connected with bringing in fresh products on a daily basis.

For example, some who cook wheat products use cooking oil that does not meet the relevant standards. They however do not lower the price of commodities.

To be sincere, average food sellers are not sincere in their businesses. Almost all of cthem use substandard cooking ingredients to cook. Imagine using rotten peppers because they are cheap. Groundnut oil that contains cholesterol and so on and so forth.
Selling expired foods is unethical and unlawful. There are eateries here which offer leftovers (before expiry date) to charity or simply give them away to those in need. I think this is a good practice. It can help people in need and to avoid wastage.
Well I don't understand what you mean by cheating in food selling because I was expecting to see restaurants or vendors still selling food that has slept over a day or two days two people bye microwaving it or mixing it with the new food that is being prepared to sell.

There are many here in the hotels in the city where I live, diners landed in the hospital during a special gathering. The food was toxic left over or cooked in advance. I was also a victim of this thrice. I experienced severe stomach pain after eating dinner in a big hotel in the city. I blottered them and reported them to the city government health office and they were fined.
That is really bad honestly and this happens all in the quest of looking for money huge income from the business as there was no sale a day before or two days before they rather microwave it and resell to the people than throw it away and it is bad honestly speaking.
A good reputation for one's business is very important. It will make your business to be credible to all your customers.
It is not everybody that knows this value as there are some people who don't care about their integrity and reputation but they just want to make profit and that is why things like this to happen.
